Whip up a cozy sausage and veggie bake for a meal that'll warm your family's hearts.
Ingredients:
  • 12 chipolata sausages
  • 2 celery stalks, trimmed, sliced
  • 1 onion, thinly sliced
  • 500.00 ml passata
  • 1 zucchini, halved lengthwise, sliced
  • 1 finger eggplant, halved lengthwise, sliced
  • 62.50 ml stuffed green olives
  • 40.00 ml parsley leaves
  • Mashed potato to serve
Instructions:
  • Preheat oven to a moderate 180°C.
  • Preheat a large frying pan over high heat. Sear sausages for 4-5 minutes, flipping occasionally, until beautifully golden. Place the sausages into a 20 x 30cm shallow baking dish.
  • In a hot pan, quickly cook celery, onion, and garlic. Add passata, zucchini, and eggplant, then season generously. Bring to a boil and pour over sausages.
  • Place foil over the dish and bake for 10-15 minutes. Sprinkle with olives and parsley before serving alongside mashed potato.
