Warm sausage salad

Indulge in a delicious warm sausage salad bursting with superb flavors using your favorite sausages.
Ingredients:
  • olive oil cooking spray
  • 4 thick lean lamb sausages
  • 2 oranges, juiced
  • 250.00 ml couscous
  • 18.20 gm olive oil
  • 50g baby spinach
  • 125.00 ml mint leaves, chopped
  • 62.50 ml basil leaves, chopped
  • 1 long red chilli, thinly sliced
  • 400g butternut pumpkin, deseeded, roughly chopped
Instructions:
  • Place a layer of pumpkin on a microwave-safe plate and cover. Microwave on HIGH for 4 to 5 minutes until tender, then drain.
  • Heat a large, non-stick frying pan sprayed with oil over medium-high heat. Cook sausages for 8 to 10 minutes until cooked through. Remove from pan and cover to keep warm.
  • Coat the pumpkin with oil and sauté in a pan until lightly golden, approximately 5 minutes.
  • In a saucepan over high heat, bring 1/2 cup of orange juice and 1/2 cup of cold water to a boil. Place couscous in a large, heatproof bowl, pour over the boiling liquid, stir well with a fork, cover, and let it stand for 5 minutes until the couscous absorbs all the liquid. Finally, drizzle with oil and gently stir before serving.
  • Prepare the sausages by slicing them. In a bowl, mix together the sliced sausages, pumpkin, spinach, mint, basil, chili, and couscous. Season with salt and pepper to taste. Serve and enjoy!
