Family-friendly sausage, bean, and potato salad tossed in a flavorful vinaigrette.
Ingredients:
  • 8 (about 800g) thick beef sausages
  • 500g small chat potatoes
  • 250g green beans, topped
  • 80mls (1/3 cup) olive oil
  • 2 medium red onions, peeled, cut into thick wedges
  • 20.00 ml white wine vinegar
  • 23.40 gm wholegrain mustard
  • Salt & ground black pepper, to taste
  • 50g snow pea sprouts
  • 4 crusty bread rolls, to serve
Instructions:
  • Preheat your barbecue or grill to medium heat.
  • Grill sausages to perfection over high heat, turning occasionally, for 12-15 minutes until they reach your desired doneness.
  • Boil potatoes in a saucepan for 7-10 minutes until just tender. In a separate saucepan, boil beans for 2 minutes until tender crisp. Drain both and briefly refresh under cold water. Halve the potatoes.
  • Heat 1 tablespoon of olive oil on a barbecue plate or in a frying pan. Sauté onions for 5 minutes until they are just soft. Remove onions and sausages from the heat, then slice the sausages.
  • Prepare the dressing by combining the remaining 60mls (l/4 cup) olive oil, vinegar, mustard, salt, and pepper in a screw-top jar, shake vigorously. Combine sausages, potatoes, beans, onions, and dressing in a large bowl. Gently mix in snow pea sprouts and serve with bread rolls.
