Warm potato and sausage salad

Nourishing and flavorful salad perfection.
Ingredients:
  • 750g chat potatoes
  • 100g snow peas, trimmed
  • 8 reduced-fat beef chipolata sausages
  • 50g baby spinach
  • 117.50 gm light sour cream
Instructions:
  • In a saucepan, add potatoes and cover with cold water. Bring to a boil over high heat, then reduce heat to medium. Cook uncovered for 10 minutes or until tender. Add snow peas for the last 2 minutes of cooking. Drain and cut potatoes into quarters; thinly slice snow peas.
  • Heat a non-stick frying pan over medium-high heat. Cook sausages, turning occasionally, for 10 minutes until golden brown and fully cooked. Transfer to a large plate, cover to keep warm.
  • In a bowl, mix together potato, snow peas, spinach, parsley, and onion. In a jug, whisk sour cream with 1 tablespoon of cold water. Pour the mixture over the potato and gently toss to combine.
  • Slice the sausages thinly then serve the potato mixture topped with the sausages.
