Elevate classic twice-baked potatoes with vibrant small purple potatoes.
Ingredients:
  • 1 bag (24 oz) purple potatoes (about 24 potatoes)
  • 1 tablespoon olive oil
  • 1/2 cup sour cream
  • 1 clove garlic, finely chopped
  • 2 tablespoons butter, softened
  • 2 to 3 tablespoons milk
  • Salt and pepper to taste
Instructions:
  • Preheat the oven to 350°F. Coat potatoes with olive oil and place on a microwave-safe plate. Microwave uncovered on High for 5 to 6 minutes until tender. Allow to cool slightly before continuing.
  • Trim both ends of the potatoes to create a flat surface. Using a small teaspoon or melon baller, hollow out the insides of the potatoes, making sure to leave a little bit at the base.
  • In a medium bowl, combine potatoes, sour cream, garlic, butter, and just the right amount of milk until smooth. Season with salt and pepper. Fill the hollowed-out potatoes with the mixture or use a decorating bag with a fluted tip to pipe the mixture into the potatoes. Arrange the filled potatoes on an ungreased cookie sheet.
  • Bake until piping hot, then top with fresh chopped herbs if preferred.
