Vibrant purple carrot soup with a kick of garlic and ginger for a flavorful and nutritious meal.
Ingredients:
  • 1 tablespoon olive oil
  • 1 stalk celery, diced
  • 1 shallot, diced
  • 1 teaspoon fresh ginger, peeled and smashed
  • 1 clove garlic, smashed
  • 1.25 pounds purple carrots, sliced
  • 0.5 pound potatoes, diced
  • 5 cups vegetable broth, divided
  • 4 tablespoons chopped pistachio nuts
  • 4 tablespoons sour cream
Instructions:
  • In a pot, warm olive oil over medium heat and sauté celery, shallot, ginger, and garlic until aromatic, approximately 5 minutes. Incorporate carrots and potatoes, then pour in 3 cups of vegetable broth. Gently bring to a boil, then reduce heat and simmer until carrots and potatoes are tender, around 15 minutes.
  • Blend the soup using an immersion blender until perfectly smooth, gradually adding more broth as needed to achieve your preferred thickness.
  • Top with a sprinkle of pistachio nuts and a dollop of sour cream.
