Whip up a refreshing winter salad for a crisp and satisfying meal when salad greens are scarce.
Ingredients:
  • 1200g (orange, purple and white - see note) baby carrots, peeled, trimmed, very thinly sliced (a mandoline is ideal)
  • 1 firmly packed cup flat-leaf parsley, roughly chopped
  • 75g hazelnuts
  • 20.00 ml cayenne pepper (optional)
  • 1 garlic clove, finely chopped
  • 1 tsp cumin seeds
  • 42.00 gm lime juice
  • 36.40 gm extra virgin olive oil
Instructions:
  • Prepare the dressing by combining garlic, cumin seeds, lime juice, olive oil, and 2 teaspoons of sea salt in a mortar and pestle. Pound until a coarse paste forms, then season with freshly ground black pepper. Set aside.
  • Thinly slice the carrot into matchsticks and combine in a bowl with parsley and chopped hazelnuts. Drizzle the dressing over the salad and mix everything together by hand until well combined.
  • Plate the dish elegantly, sprinkle with optional cayenne for a touch of heat, and enjoy immediately.
