Winter salad with cabbage, walnuts, and oranges for a perfect sweet and savory balance.
Ingredients:
  • 2 oranges
  • 63.75 gm chicken style liquid stock
  • 11.80 gm wholegrain mustard
  • 2 garlic cloves, thinly sliced
  • 800g cabbage
  • 28.75 gm walnuts, toasted, roughly chopped
  • 125.00 ml fresh flat-leaf parsley leaves
Instructions:
  • Peel and remove pith from oranges using a small sharp knife. Cut along each side of membrane to release orange segments into a bowl. Squeeze membrane over a jug to collect 1/4 cup of juice. Combine juice with stock and mustard, then stir well.
  • In a large deep frying pan, heat oil over medium-high heat. Add garlic and cook until fragrant, about 30 seconds. Add cabbage, cook while turning for 3 minutes.
  • Pour the flavorful juice mixture into the pan. Lower the heat to low and cover the pan. Allow it to simmer gently for 6 to 8 minutes until the cabbage is tender. Sprinkle some salt and pepper to season the dish. Finish by garnishing with orange segments, crunchy walnuts, and fragrant parsley. Finally, serve and enjoy your delicious creation.
