Soy-braised chicken with noodles recipe

Quick and flavorful soy-braised chicken noodles ready in 30 minutes. Ideal for busy days!
Ingredients:
  • 9.20 gm vegetable oil
  • 2 tsp sesame oil
  • 1kg Australian Chicken Thigh Fillets, halved crossways
  • 3 garlic cloves, crushed
  • 20.00 ml finely grated ginger
  • 80ml orange juice
  • 60ml soy sauce
  • 60ml mirin
  • 60ml honey
  • 0.60 gm sea salt flakes
  • 40.00 gm caster sugar
  • 40.00 ml rice wine vinegar
  • 1/4 small red cabbage, finely shredded
  • 1 Lebanese cucumber, cut into matchsticks
  • 3 x 72g pkts 2 Minute Noodles Chicken Flavour
  • 125.00 ml coriander sprigs
Instructions:
  • Heat oil in a large frying pan over high heat. Brown chicken for 2 minutes on each side. Add garlic and ginger, then toss to combine.
  • Pour in the orange juice, soy sauce, rice wine, and honey into the pan. Bring it to a vigorous boil, then lower the heat. Let it simmer gently while flipping the chicken every now and then for about 15 minutes, until the chicken is fully cooked and the sauce has thickened.
  • In a bowl, mix together the salt, sugar, vinegar, and 2 tablespoons of water. Add in the cabbage and cucumber, stirring well to combine.
  • Prepare the MAGGI noodles according to the packet instructions, and remember to sprinkle in the flavor sachets towards the end of cooking. Once cooked, drain the noodles.
  • Distribute the noodles into individual serving bowls and top with the chicken, cabbage, and coriander.
