Elevate your weeknight dinners with this flavorful braised chicken dish using pantry essentials and seasonal produce.
Ingredients:
  • 125ml (1/2 cup) apple cider vinegar (see note)
  • 80ml (1/3 cup) soy sauce
  • 6 cloves garlic, bruised
  • 3cm piece ginger, finely grated
  • 2 long red chillies, thinly sliced, plus extra, sliced, to serve
  • 4 bay leaves
  • 55g (1/4 cup firmly packed) brown sugar
  • 20.00 ml black peppercorns
  • 1 large onion, thinly sliced
  • 1.2kg chicken wings
  • Steamed white rice, to serve
Instructions:
  • In a large bowl, combine vinegar, soy sauce, garlic, ginger, chillies, bay leaves, sugar, peppercorns, onion, and 500ml (2 cups) water. Stir mixture thoroughly. Add chicken and coat well. Let marinate at room temperature for 30 minutes.
  • Pour the chicken mixture into a large, heavy-based saucepan. Heat over high until it boils. Lower the heat to medium, cover loosely with foil, and simmer for 25 minutes, stirring occasionally, until chicken is cooked through.
  • Remove the chicken wings using tongs and place them in a large bowl. Simmer the sauce for an additional 10 minutes, or until it reduces by half and slightly thickens.
  • Add the chicken back into the pan and mix well. Cook for another 5 minutes until the chicken is fully cooked. Let it cool down for 5 minutes before serving.
  • Portion the savory chicken adobo into individual bowls generously, drizzle with the flavorful sauce, and garnish with additional sliced chillies for a touch of heat. Accompany it with fluffy steamed white rice for a satisfying meal.
