Easy and delicious chicken adobo with tender meat in a flavorful peppery sauce, perfect over rice.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 (3 pound) chicken, cut into pieces
  • 1 large onion, quartered and sliced
  • 2 tablespoons minced garlic
  • 0.66666668653488 cup low sodium soy sauce
  • 0.33333334326744 cup white vinegar
  • 1 tablespoon garlic powder
  • 2 teaspoons black pepper
  • 1 bay leaf
Instructions:
  • In a large skillet over medium-high heat, heat vegetable oil. Sear chicken pieces until golden brown on each side, about 2 to 3 minutes. Remove chicken from skillet and set aside on a plate.
  • Saute the onion and garlic in the skillet until they are soft and golden brown, approximately 6 minutes.
  • Combine soy sauce, vinegar, and season with garlic powder, black pepper, and bay leaf for a burst of flavor.
  • Add the chicken back to the pan and raise the heat to high until it comes to a boil. Then lower the heat to medium-low, cover, and simmer for 35 to 40 minutes until the chicken is tender and fully cooked.
