Golden brown, seasoned chicken cutlets pan-fried and simmered in a zesty lemon butter sauce for Chicken Française.
Ingredients:
  • 1 large egg, beaten
  • 1.5 medium lemons, juiced, divided
  • 1 cup all-purpose flour
  • 1 pinch garlic powder
  • 1 pinch paprika
  • 6 skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 1 (14.5 ounce) can chicken broth
  • 6 slices lemon, for garnish
  • 2 sprigs fresh parsley, for garnish
Instructions:
  • Combine egg and 1/3 of the lemon juice in one dish. In a separate dish, mix flour, garlic powder, and paprika.
  • Coat chicken breasts first in the egg mixture, then in the flour mixture.
  • In a large skillet over medium heat, melt butter until bubbling. Add chicken breasts and sear until beautifully golden on both sides, approximately 2 to 3 minutes per side.
  • Combine the broth and the rest of the lemon juice in a medium bowl. Pour this mixture over the chicken in the skillet. Lower the heat to medium-low and allow it to simmer until the center of the chicken reaches a minimum of 165 degrees F (74 degrees C), approximately 8 minutes.
  • Transfer the chicken to a stylish platter. Drizzle generously with zesty lemon sauce and adorn with slices of fresh lemon and vibrant parsley sprigs.
