Grilled Chicken Adobo

Succulent chicken thighs marinated in savory soy, garlic, and vinegar, grilled to perfection. Delicious served atop fluffy rice.
Ingredients:
  • 1.5 cups soy sauce
  • 1.5 cups water
  • 0.75 cup vinegar
  • 3 tablespoons honey
  • 1.5 tablespoons minced garlic
  • 3 bay leaves
  • 0.5 teaspoon black pepper
  • 3 pounds skinless, boneless chicken thighs
Instructions:
  • Heat up the outdoor grill on high and brush the grate lightly with oil.
  • Combine soy sauce, water, vinegar, honey, garlic, bay leaves, and pepper in a large pot and bring to a boil. Add the chicken, reduce heat, cover, and simmer for 35 to 40 minutes.
  • Take out the chicken, let it rest on paper towels, and set it aside. Remove bay leaves. Allow the mixture to return to a boil and simmer until it reduces to about 1 1/2 cups.
  • Grill the chicken for about 5 minutes on each side until golden and crispy. Drizzle with the leftover soy sauce mixture before serving.
