Tender chicken adobo, a beloved Filipino classic. Soy sauce, vinegar, garlic, ginger, and peppercorns create a flavorful marinade that enhances the dish. Perfect for picnics, this recipe is a cherished family tradition with a twist. Enjoy this budget-friendly and simple meal served hot over steamed Jasmine rice.
Ingredients:
  • 1 (3 pound) whole chicken, cut into 8 pieces
  • 0.75 cup distilled white vinegar
  • 0.5 cup soy sauce
  • 2 tablespoons thinly sliced fresh ginger root
  • 0.5 tablespoon black peppercorns
  • 1 bulb garlic, peeled and crushed
  • 2 bay leaves
Instructions:
  • In a Dutch oven, mingle chicken, vinegar, soy sauce, ginger, peppercorns, garlic, and bay leaves. Let it come to a gentle boil over medium heat. Cover, simmer for 30 minutes, intermittently brushing chicken with the savory sauce.
  • Uncover and simmer until the liquid reduces by half, about 5 to 10 minutes. Use an instant-read thermometer to check that the temperature near the bone reaches 165 degrees F (74 degrees C).
  • Place the chicken on a serving plate. Strain the liquid in the pot to discard bay leaves and solids.
  • Serve the hot chicken, then elegantly drizzle with the strained sauce.
