Effortless slow cooker braised chicken drumsticks bursting with flavor, perfect for a stress-free family dinner.
Ingredients:
  • 8 chicken drumsticks
  • 2.50 gm mild paprika
  • 500g baby coliban (chat) potatoes, halved
  • 6 French shallots, peeled, halved
  • 3 fresh thyme sprigs, plus extra sprigs, to serve
  • 3 fresh or dried bay leaves
  • 1 bunch baby carrots, peeled, trimmed
  • 1 leek, halved lengthways, coarsely chopped
  • 2 Beef Style Stock Cubes
  • 160ml (2/3 cup) Beef Style Liquid Stock
Instructions:
  • In a large bowl, mix the drumsticks with paprika and oil, making sure they are well coated. Heat a large frying pan over medium-high heat. Cook the chicken for 5 minutes, turning frequently, until golden. Transfer to a bowl.
  • Place the potato and shallot in the pan. Sauté for 5 minutes until golden, then add the thyme and bay leaves and cook for an additional 1-2 minutes until fragrant.
  • Add the potato mixture to a slow cooker, then layer with carrot and leek. Sprinkle in crumbled stock cubes and pour over the stock. Place the chicken on top. Cover and cook on low for 4 hours until the potato and chicken are tender. Season with pepper and garnish with extra thyme before serving.
