Citrus-infused chicken thighs cooked in a flavorful orange juice and pepper broth, ready in 30 minutes but tastes slow-cooked to perfection.
Ingredients:
  • 2 tablespoons olive oil
  • 4 bone-in chicken thighs
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 2 cups orange juice (no pulp)
  • 0.25 cup brandy-based orange liqueur (such as Grand Marnier®)
  • 1 pinch salt and ground black pepper
  • 0.25 teaspoon red pepper flakes
Instructions:
  • In a skillet over medium heat, heat olive oil and sear chicken thighs until golden brown on both sides, about 5 minutes each. Set chicken aside.
  • Saute the onion in the skillet until soft, for about 5 minutes, stirring occasionally.
  • Add the garlic and cook until fragrant, approximately 1 minute, stirring constantly.
  • Combine tomatoes, orange juice, orange liqueur, salt, black pepper, and red pepper flakes, stirring until well blended.
  • Place the chicken thighs back in the skillet, cover, and let it come to a boil. Lower the heat to medium-low and gently simmer until the chicken is tender and fully cooked, about 25 to 30 minutes.
