Orange-braised fennel

Ingredients:
  • 4 baby fennel bulbs, trimmed, cut into thin wedges, fronds reserved
  • 1 large brown onion, cut into thin wedges
  • 2 garlic cloves, thinly sliced
  • 131.25 gm orange juice
  • 127.50 gm chicken style liquid stock
Instructions:
  • Preheat the oven to 200°C (180°C fan-forced).
  • In a flameproof baking dish, heat oil over medium-high heat. Add fennel, onion, and garlic, and cook for 4 to 5 minutes until lightly browned. Pour in juice and stock, stir well to combine, then transfer to the oven.
  • Roast for 30 minutes or until fennel is tender. Use a slotted spoon to remove fennel and discard the liquid. Serve the fennel topped with reserved fronds.
