Beer-braised cabbage with mustard and thyme is a delicious side for pork.
Ingredients:
  • 2 tablespoons unsalted butter
  • 1 onion, minced
  • 0.5 cup light-bodied beer
  • 1 tablespoon whole grain mustard
  • 0.5 teaspoon minced fresh thyme
  • 1 small head cabbage - halved, cored, and thinly sliced
  • 2 teaspoons cider vinegar
Instructions:
  • In a large skillet over medium-high heat, melt butter. Cook the onion until softened for about 5 minutes. Add beer, mustard, and thyme. Lower the heat and simmer until slightly thickened, approximately 2 minutes.
  • Combine the cabbage and vinegar in the pan. Cook with the lid on, stirring occasionally, until the cabbage is soft and flavorful, approximately 8 minutes. Finish by seasoning with salt and black pepper to taste.
