Elevate your steak with vibrant carrot slaw featuring purple cabbage, cranberries, and parsley - perfect to prep ahead!
Ingredients:
  • 2 cups thinly shredded purple cabbage
  • 1 (10 ounce) bag shredded carrots
  • 0.75 cup dried cranberries
  • 0.5 medium onion, thinly sliced
  • 2 tablespoons chopped fresh parsley, or to taste
  • 0.5 (8 ounce) bottle balsamic vinaigrette salad dressing
  • 0.25 cup salted sunflower seeds
  • 0.5 cup crumbled blue cheese, or to taste
Instructions:
  • Combine cabbage, carrots, cranberries, onion, and parsley in a bowl. Gently toss. Drizzle with dressing and lemon juice, making sure to coat well. Chill in the refrigerator for at least 3 hours or overnight to allow flavors to meld. Before serving, sprinkle with sunflower seeds and blue cheese. Enjoy!
