Ingredients:
  • 1 (about 600g) head of celeriac
  • 2 carrots, coarsely grated
  • 80g baby rocket
  • 2cm piece fresh ginger, peeled, finely grated
  • 40.00 ml chopped fresh dill
  • 75g sour cream
  • 65g mayonnaise
  • 21.00 gm fresh lemon juice
  • Salt & freshly ground pepper
  • 4 pork loin cutlets
  • 9.20 gm olive oil
Instructions:
  • Peel the celeriac with a small sharp knife, then grate it coarsely. Squeeze out excess liquid with your hands. In a bowl, mix the celeriac, carrot, rocket, ginger, and dill. Whisk together sour cream, mayonnaise, and lemon juice. Season with salt and pepper. Add the dressing to the celeriac mixture and combine well. Set it aside.
  • Preheat a barbeque grill or chargrill pan to medium heat. Brush both sides of the pork with oil and season with salt and pepper. Grill for 3-4 minutes on each side. Remove the pork from the grill, cover loosely with foil, and let it rest for 5 minutes.
  • Present the pork cutlets alongside the flavorful celeriac and carrot slaw.
