Succulent apple-braised pork with refreshing celeriac slaw - a family favorite!
Ingredients:
  • 4 pork forequarter cutlets (about 185g each)
  • 18.20 gm olive oil
  • 1 brown onion, sliced
  • 255.00 gm chicken stock
  • 86.63 gm apple juice
  • 23.40 gm whole grain mustard
  • 1 Granny Smith apple, cored, cut into matchstick-size strips (about 1 cup)
  • 1/2 celeriac, peeled, cut into matchstick-size strips (about 1 cup)
  • 2 tsp fresh flat-leaf parsley, chopped
  • 1 tsp apple cider vinegar
  • 4.50 gm sugar
  • Mashed potatoes, to serve
Instructions:
  • Preheat your oven to 150C (130C for fan-forced ovens).
  • Season the pork generously with salt and pepper. Heat a large heavy ovenproof sauté pan over high heat, then add the oil. Sear the pork for about 3 minutes on each side until golden brown. Transfer the pork to a plate and let it rest.
  • Saute the onion in the pan until soft. Pour in the stock and apple juice, then bring to a simmer. Braise the pork covered in the oven for 1 hour and 10 minutes. Uncover and cook for an additional 20 minutes until fork-tender. Remove the pork and skim any fat off the liquid. Stir in the mustard and simmer for 5 minutes until reduced by two-thirds.
  • In a bowl, combine the apple, celeriac, parsley, vinegar, and sugar. Season the slaw with salt and pepper to taste.
  • plate the pork and sauce among 4 dinner plates, then add a generous serving of the slaw on top. Serve with a side of creamy mashed potatoes.
