Slow-Cooker Cider Braised Pork

Tender pork simmered in apple cider and honey, paired with creamy mashed potatoes for a comforting meal.
Instructions:
  • Coat a 5- to 6-quart slow cooker with cooking spray and add the onion.
  • Heat oil in a 12-inch skillet over medium-high heat. Season pork with salt and 1/2 teaspoon pepper, then cook in the hot oil for about 10 minutes until nicely browned on all sides. Transfer the pork to the slow cooker placed over sliced onions. In a small bowl, combine cider and honey, then pour the mixture around the pork.
  • Slow cook the pork covered on Low heat for 8 to 9 hours. Transfer the pork to a cutting board and allow it to rest for 5 minutes. Using 2 forks, shred the pork. Skim any fat off the cooking liquid in the slow cooker. In a small bowl, combine cornstarch and water, then add to the cooking liquid. Turn the heat setting to High and cook, stirring constantly, for 1 to 2 minutes until the gravy thickens.
  • Heat the mashed potatoes according to package instructions, then serve them with the pork and gravy. Sprinkle with extra pepper for a flavorful finish.
