Tender pork shoulder simmered in apple cider in a slow cooker, resulting in a deliciously rich sauce.
Ingredients:
  • 1 (4 pound) boneless pork shoulder roast
  • salt and freshly ground black pepper to taste
  • 1 tablespoon vegetable oil
  • 2 shallots, sliced
  • 1 rib celery, chopped
  • 0.5 cup apple cider vinegar
  • 2.5 cups apple cider
  • 4 cloves garlic, peeled
  • 1 bay leaf
  • 1.5 teaspoons Dijon mustard
  • 1 pinch cayenne pepper, or more to taste
  • 2 tablespoons cold butter, cut into small pieces
  • 1 tablespoon chopped fresh herbs (Italian parsley, sage, or thyme)
Instructions:
  • Season the pork generously with salt and black pepper. In a large skillet over high heat, heat oil until shimmering. Brown the pork on all sides in the hot oil, about 3 minutes per side. Transfer the seared pork to the slow cooker.
  • Reduce the stovetop heat to medium. Saute shallots and celery in the skillet until just starting to soften, about 3 to 4 minutes. Add apple cider vinegar to deglaze the pan, cooking until the liquid is almost completely reduced, around 4 to 5 minutes.
  • Pour the flavorful shallot mixture all over the pork shoulder resting in the slow cooker. Introduce apple cider, garlic cloves, and a bay leaf to the mix. Cover the slow cooker, select the Low setting, and let it cook until the pork is fork-tender yet holding its shape, which should take roughly 6 hours. Remember to flip the pork every 1 to 2 hours for even cooking. Once done, transfer the pork roast to a plate and tent it loosely with foil.
  • Strain the liquid from the slow cooker into a saucepan using a fine mesh strainer. Remove the bay leaf and solids. Bring the sauce to a boil, reduce heat, skim off any fat, and simmer until it reduces to 1/4 of its original volume, around 10 minutes.
  • Take the sauce off the heat and mix in the Dijon mustard and cayenne pepper. Gradually whisk in the cold butter until blended. Add in fresh herbs and season with salt and black pepper to your liking.
  • Slice the pork into 1/4-inch thick pieces and drizzle the sauce on top before serving.
