Indulge in a decadent carrot cake with toffee pecans, coconut icing, and a surprising purple twist.
Ingredients:
  • 310g (2 cups) spelt flour
  • 205g (1 1/4 cups, lightly packed) brown sugar
  • 8.00 gm baking powder
  • 0.63 gm bicarbonate of soda
  • 2.50 gm ground cinnamon
  • 1.25 gm ground ginger
  • 1/2 tsp ground allspice
  • 185ml (3/4 cup) extra virgin olive oil
  • 185ml (3/4 cup) coconut milk
  • 60ml (1/4 cup) honey
  • 3 eggs, lightly whisked
  • 300g (2 cups, firmly packed) coarsely grated purple carrots
  • 70g (1/2 cup) pecans, chopped
  • 55g (1/4 cup) caster sugar
  • 105g (3/4 cup) pecans
  • 250g cream cheese, chopped, at room temperature
  • 40.40 gm coconut milk
  • 750g (5 cups) pure icing sugar
Instructions:
  • Preheat the oven to 180C/160C fan forced. Line a 20cm square cake pan with baking paper for easy cleanup.
  • In a bowl, whisk together flour, sugar, baking powder, bicarb, cinnamon, ginger, allspice, and a pinch of salt. Create a well in the center. In a large jug, mix oil, coconut milk, honey, and egg. Pour the wet ingredients into the well. Add carrots and pecans. Gently stir until just combined. Transfer the batter to a prepared pan. Bake for 50-60 minutes until a skewer comes out clean. Allow the cake to cool in the pan before transferring to a rack to cool completely.
  • For the toffee pecans, prepare a baking tray with a sheet of baking paper. Heat sugar in a non-stick frying pan over medium-low heat until golden, shaking occasionally for about 3 minutes. Quickly mix in the pecans, then pour the mixture onto the tray. Let it cool and break into pieces.
  • Combine cream cheese and coconut milk in a bowl and mix using electric beaters until smooth. Gradually incorporate the icing sugar while continuing to beat.
  • Cover the cake with the luscious coconut icing and generously sprinkle with toffee pecans. Allow it to set before cutting into delightful squares.
