Sweet Sticky Rice and Mango

Recreate the famous Thai mango sticky rice at home with ease!
Ingredients:
  • 8 cups water, divided
  • 1 cup sweet rice
  • 1 (15 ounce) can coconut milk
  • 0.75 teaspoon salt
  • 1 ripe mango, peeled and sliced
Instructions:
  • In a large bowl, gently mix together 6 cups of water and the rice, then let it soak for 8 hours to overnight.
  • Strain and rinse the rice. Boil 2 cups of water with the rice in a saucepan. Simmer covered on medium-low heat until rice is tender and water is absorbed, about 15 to 20 minutes. Serve in a bowl.
  • In a small saucepan, blend coconut milk, sugar, and salt and heat until just boiling. Drizzle the mixture over the cooked rice and let it sit for 30 minutes. Enjoy warm with sliced mango.
