Sticky Rice with Coconut Milk and Mango

Indulge in a heavenly Thai dessert of sweet mango and coconut sticky rice that will delight your loved ones.
Ingredients:
  • 1 cup sweet (glutinous) rice
  • 1 cup coconut milk
  • 0.125 teaspoon salt
  • 1 ripe mango - peeled, seeded, and sliced
Instructions:
  • Thoroughly wash sweet rice until water is clear. Soak rice in warm water for 2 to 4 hours. Drain rice.
  • 1. Insert a steamer into a saucepan and fill with water just below the bottom of the steamer. Bring water to a boil. Line the steamer with cheesecloth, add rice, and steam until cooked through, around 20 minutes. Remove from heat and transfer rice to a bowl.
  • Combine creamy coconut milk, sweet sugar, and a pinch of salt in a saucepan, then gently heat until it simmers. Drizzle 3/4 of this luxurious mixture over the fluffy rice, cover, and allow the flavors to meld for 5 minutes.
  • Drizzle the rest of the coconut milk mixture over the rice and garnish with mango slices.
