Kid-friendly sweet rice paper rolls - a fun and easy treat for everyone!
Ingredients:
  • 270g can coconut milk
  • 275g (1 1/4 cups) medium grain rice
  • 16 large sheets rice paper
  • 4 large ripe strawberries, thinly sliced
  • 2 ripe kiwifruit, peeled, halved, thinly sliced crossways
  • 1 large mango, peeled, cheeks thinly sliced crossways
  • 2 small bananas, thinly sliced
  • Fresh mint leaves, optional
  • 90g light palm sugar, coarsely grated
  • 40.40 gm double cream
  • 10.60 gm fresh lime juice
Instructions:
  • In a saucepan, combine 375ml (1 1/2 cups) water and coconut milk and bring to a boil. Stir in the rice, reduce the heat to medium, cover, and cook for 20 minutes until the liquid is absorbed. Fluff the rice with a fork, then transfer to a large tray and cool in the fridge.
  • Prepare the caramel by combining palm sugar and 60ml (1/4 cup) water in a saucepan over low heat. Let the palm sugar dissolve, then bring to a boil. Allow it to boil for 8-10 minutes until dark golden without stirring. Remove from heat, mix in the cream, and let it cool slightly for 5 minutes. Stir in the lime juice and transfer to a serving bowl.
  • 1. Submerge a rice paper sheet in warm water for about 30 seconds, or until soft and pliable without becoming overly soggy.
  • 1. Remove moistened rice paper from water and let excess water drip off. Lay flat on a clean surface. 2. Arrange a portion of sliced fruit and mint (if desired) in the center of the rice paper. Add 2 tablespoons of coconut rice on top. 3. Fold the edges in and roll tightly like a burrito. Repeat process with remaining ingredients. 4. Serve alongside the caramel sauce for dipping.
