Hawaiian Broiled Cod with Rice

Tropical cod fillet with fruit rice - ready in 25 minutes.
Ingredients:
  • 1 can (8 ounces) pineapple in juice, drained and juice reserved
  • 2 tablespoons orange juice
  • 1 teaspoon grated orange peel
  • 2 teaspoons soy sauce
  • 1/2 pound cod or other firm white fish fillet
  • 2 cups hot cooked rice
  • 1/2 orange, peeled and chopped
  • 1 green onion, chopped
  • 1 tablespoon coconut, toasted if desired
Instructions:
  • Preheat oven to broil and grease broiler pan with cooking spray.
  • Combine 1/3 cup of pineapple juice, orange juice, orange peel, and soy sauce. Cut the fillet into 2 pieces and marinate in the sauce for 5 minutes before removing.
  • Place the fish on the broiler pan rack and broil it 4 to 5 inches from the heat for 6 to 8 minutes, or until it flakes easily with a fork.
  • Heat the marinade in a 1-quart saucepan until boiling, then reduce heat to low and simmer for 3 minutes, stirring occasionally. Combine the marinade with pineapple, rice, orange, and green onion.
  • Present the fish on a bed of fruity rice and garnish with optional toasted coconut.
