Ingredients:
  • 150g rice
  • 500ml milk
  • 500ml coconut milk
  • 50g caster sugar
  • 20g shredded coconut
  • 2 mangoes, peeled and diced.
  • Honey, to serve
Instructions:
  • Place the rice in a saucepan and cover with cold water. Bring to a boil, cook for 5 minutes, then drain and return the rice to the pan.
  • Combine the milk, coconut milk, and sugar in a pot and bring to a boil. Reduce heat and simmer gently, stirring occasionally, until rice is tender and liquid is absorbed, about 20-25 minutes.
  • Take the pan off the heat and gently fold in the coconut. Divide the mixture into bowls. Top each serving with mango slices and a generous drizzle of honey before serving.
