Indulge in a decadent coconut rice pudding topped with caramelized pears for a delightful fruit dessert by Curtis Stone.
Ingredients:
  • 20.00 gm water
  • 1 tsp rice wine vinegar
  • 505.00 gm coconut milk
  • 321.88 gm Brand Full Cream Milk
  • 100.00 gm Brand Arborio Rice
  • 18.00 gm sugar
  • 0.63 gm Brand Ground Cinnamon
  • 28.60 gm Smart Buy Honey
  • 1.20 gm salt
  • 9.00 gm sugar, extra
  • 1/2 pear, sliced very thinly
Instructions:
  • In a heavy-based saucepan, mix coconut milk, milk, rice, sugar, salt, and cinnamon. Stir well and bring to a boil.
  • Simmer on low heat, stirring occasionally, for 20-25 minutes until the rice is tender and the liquid is mostly absorbed.
  • Let it sit off the heat for 5 minutes.
  • Spoon the rice pudding into 4 small glasses or bowls and chill in the refrigerator for an hour to cool.
  • To caramelize the pears: In a heavy-based frying pan, mix honey, sugar, water, and vinegar. Swirl the pan to dissolve sugar. Add pear slices and cook over medium-high heat for 2-3 mins until pears are cooked and caramelized. Serve by spooning over rice puddings.
