Creamed coconut rice pudding

Delicious rice pudding topped with mango for a comforting treat.
Ingredients:
  • 100g white long-grain rice
  • 1 stalk lemon grass, bruised
  • 107.50 gm caster sugar
  • 4.40 gm vanilla extract
  • 500ml coconut milk
  • 200ml full-fat milk
  • 1 mango, peeled, cut into shavings with a vegetable peeler
Instructions:
  • Begin by washing the rice under cold running water, then combine it in a saucepan with lemongrass, sugar, vanilla, coconut milk, and full-fat milk. Bring the mixture to a boil while stirring constantly. Lower the heat to very low and let it simmer for an hour. Make sure to stir it occasionally to avoid it sticking to the pan. Remove and discard the lemongrass, then allow the mixture to cool down.
  • Garnish the coconut rice with fresh mango shavings and serve at room temperature.
