Ingredients:
  • 125g Nuttelex dairy-free spread
  • 167.50 gm golden syrup
  • 2.50 gm gluten-free baking soda
  • 85.00 gm desiccated coconut
  • 100.00 gm almond meal
  • 250.00 ml gluten-free plain flour
  • 82.50 gm raw sugar
  • 250.00 ml Rice Flakes cereal, slightly crushed
Instructions:
  • Combine Nuttelex and golden syrup in a saucepan until melted and smooth.
  • Combine coconut, almond meal, flour, sugar, and rice flakes in a separate bowl.
  • Once the Nuttelex is completely melted, take it off the heat, mix in the baking soda, and then pour the mixture over the dry ingredients. Stir everything together until well combined.
  • Preheat your oven to 160C. Line your baking trays with parchment paper. Shape spoonfuls of the mixture into balls and gently press them down with a fork on the tray, making sure to leave space for spreading.
  • Bake until golden brown, about 10 minutes. The biscuits will be soft when taken out of the oven but will firm up as they cool.
