Impress guests with a gluten-free, dairy-free banana bread that tastes just like the original!
Ingredients:
  • 2/3 cup sugar
  • 3 tablespoons coconut oil, melted
  • 2 eggs
  • 1 1/2 cups mashed ripe bananas (3 medium)
  • 1/3 cup original almond milk
  • 2 cups gluten free all-purpose rice flour blend
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon gluten-free baking powder
  • 1/2 teaspoon salt
Instructions:
  • Preheat oven to 350°F and generously grease the bottom of a 9x5- or 8x4-inch loaf pan.
  • In a large bowl, use an electric mixer to beat together sugar and melted oil until light. Add eggs and beat well. Stir in bananas and almond milk until well blended. In a separate bowl, combine flour blend, baking soda, baking powder, and salt. Gently fold this mixture into the banana mixture until just combined. Pour the batter into the pan.
  • Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 5 minutes in the pan on a cooling rack.
  • Gently release the loaf from the pan, place it top side up on a cooling rack, and allow it to cool completely for 1 to 2 hours. Once cooled, slice and enjoy. Store tightly wrapped at room temperature for up to 4 days or in the refrigerator.
