Delicious dairy-free banana bread, perfect for breakfast!
Ingredients:
  • 112.50 gm self-raising flour
  • 112.50 gm wholemeal self-raising flour
  • 1.25 gm ground mixed spice
  • 118.80 gm firmly packed brown sugar
  • 2 large over-ripe bananas, mashed (see note)
  • 75.90 gm canola oil
  • 65.00 gm soy milk
  • 125g fresh blueberries
  • non-dairy spread, to serve
Instructions:
  • 1. Preheat your oven to 180°C/160°C fan-forced while you prepare a 6cm deep, 9cm x 22cm loaf pan by greasing it and lining it with baking paper, leaving a 2cm overhang at both ends.
  • Sift together flours and mixed spice in a bowl. Stir in sugar. In a large jug, combine banana, eggs, oil, and milk. Gradually mix the egg mixture into the flour mixture until combined. Fold in blueberries gently.
  • Transfer the mixture into the prepared pan and use a spatula to create a smooth surface. Bake for 1 hour or until a skewer inserted into the center comes out clean. Allow the dish to rest in the pan for 10 minutes before transferring to a wire rack to cool.
