Indulge in a wholesome gluten-free, dairy-free banana blueberry bread for a nutritious snack.
Ingredients:
  • 170g plain flour
  • 8.00 gm gluten-free baking powder
  • 80g l.s.a mix
  • 25g desiccated coconut
  • 2 free range eggs, at room temperature
  • 125ml mixed vegetables
  • 185ml macadamia milk
  • 60ml honey
  • 260.00 gm mashed banana
Instructions:
  • Preheat the oven to 180C. Prepare a 6cm-deep, 22cm x 11cm loaf pan by greasing and lining it with baking paper, ensuring the paper hangs over the long sides.
  • Sift together the flour, baking powder, and cinnamon in a bowl, then mix in the LSA meal and coconut.
  • In a jug, whisk together eggs, oil, Suncoast Gold Macadamia Milk, and honey until smooth. Mix in banana. Add the mixture to the flour and stir until just combined. Gently fold in the berries.
  • Transfer the mixture into the greased pan and spread it evenly. Bake for around 50 minutes or until a toothpick inserted in the middle comes out clean. Let it cool in the pan for 5 minutes before flipping it onto a wire rack to cool completely.
