Gluten and dairy-free hamburger buns cater to dietary restrictions with ease.
Ingredients:
  • 1 tablespoon active dry yeast
  • 2 cups warm water
  • 1.5 cups rice flour
  • 1.5 cups gluten-free oat flour
  • 0.75 cup tapioca starch
  • 0.75 cup cornstarch
  • 1 tablespoon xanthan gum
  • 5 eggs
  • 0.5 cup canola oil
  • 1 tablespoon sesame seeds
Instructions:
  • Preheat the oven to a toasty 200 degrees Fahrenheit (95 degrees Celsius).
  • Combine sugar and yeast in warm water in a bowl, allowing yeast to soften and form a creamy foam, about 5 minutes.
  • In a mixing bowl, blend rice flour, oat flour, tapioca starch, cornstarch, xanthan gum, and salt. Incorporate yeast mixture, eggs, and oil into the dry ingredients. Beat on high speed with an electric mixer for 3 minutes.
  • Evenly divide the batter among eighteen 5-inch pie tins. Arrange the pie tins on 2 large cookie sheets and sprinkle sesame seeds on top of the buns.
  • Let the dough rise in the cozy, preheated oven for 30 to 40 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C) with the buns inside.
  • Bake in a hot oven for 15 minutes, then swap baking sheets on oven racks and continue baking until golden, for another 12 to 15 minutes.
