Creamed spinach elevated with creamy coconut milk for a rich and indulgent side dish.
Ingredients:
  • 1 tablespoon olive oil
  • 4 ounces sliced baby bella mushrooms
  • 1 medium shallot, minced
  • 2 cloves garlic, minced
  • 8 cups raw spinach leaves
  • 1 cup full-fat coconut milk
  • 2 teaspoons white wine vinegar
  • salt and freshly ground black pepper to taste
  • freshly-grated nutmeg (optional)
Instructions:
  • In a large skillet over medium heat, sauté mushrooms, shallot, and garlic in olive oil until soft and fragrant, about 3 minutes, stirring occasionally.
  • Add handfuls of fresh spinach gradually, stirring gently until it wilts. This process should take around 5 minutes to incorporate all the spinach into the skillet.
  • Slowly pour in the coconut milk and vinegar, then bring to a gentle simmer. Cook until the mixture thickens, about 4 to 5 minutes.
  • Season generously with salt and pepper, then sprinkle with freshly ground nutmeg. Serve promptly.
