"Quick and creamy garlic spinach - gourmet taste in just 10 minutes in the microwave!"
Ingredients:
  • 8 cups (10 ounces) pre-washed baby spinach
  • 1/2 cup solid coconut cream from a 13.5-ounce can of coconut cream (See Recipe Note)
  • 1/4 cup freshly grated Parmesan cheese, plus more for serving (see Recipe Note)
  • 2 smalls clove garlic, grated
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • 2 teaspoons lemon juice
Instructions:
  • Steam the spinach: Place baby spinach in a microwave-safe bowl, cover tightly, and microwave for 2 minutes. Stir, cover, and microwave for another minute until wilted and vibrant green. Drain excess water from the bowl by gently pressing the spinach with a spoon.
  • Prepare the creamed spinach by gently combining coconut cream solids, Parmesan cheese, garlic, nutmeg, black pepper, and salt with the spinach until the coconut cream starts to melt from the spinach's heat.
  • Ensure your bowl is covered and microwave for 1 minute. Stir thoroughly and microwave without a cover for 1 minute and 30 seconds, or until the spinach becomes soft, dark green, and the cream thickens. Add lemon juice and a sprinkle of extra Parmesan cheese. Store any leftovers in the refrigerator for up to 4 days. Reheat in the microwave when ready to enjoy again.
