Microwave lemon delicious in a mug recipe

Indulge in a zesty and sweet lemon pudding, ready in minutes in a mug for your own personal treat. Perfect for a quick and easy lemony dessert fix!
Ingredients:
  • 100g (2/3 cup) self-raising flour
  • 100g (1/2 cup) caster sugar
  • 60g butter, melted, cooled
  • 60ml (1/4 cup) milk
  • 1 egg, lightly whisked
  • 20.00 ml finely grated lemon rind
  • 60ml (1/4 cup) fresh lemon juice
  • 80ml (1/3 cup) boiling water
Instructions:
  • Lightly coat four 250ml (1 cup) microwave-safe mugs with oil or cooking spray.
  • In a bowl, mix together the flour and 70g (1/3 cup) sugar. Add in the butter, milk, egg, lemon rind, and 2 tbsp juice. Whisk until smooth and well combined. Spoon the mixture into prepared mugs evenly.
  • Combine boiling water, remaining sugar, and remaining juice in a small jug, stirring until well mixed. Pour 1 1/2 tbsp (one-quarter of the juice mixture) over each mug cake. Place mug on a small plate or saucer, then microwave on High for 1 minute 20 seconds or until cake puffs up and springs back when lightly touched. Repeat with the remaining mug cakes and juice mixture, heating them one at a time. Serve immediately.
