Whip up delicious and healthy green beans for a quick weeknight side dish.
Ingredients:
  • 45g (1/4 cup) pine nuts
  • 350g green beans, topped
  • 20.00 ml chopped fresh chives
  • 20.00 ml chopped fresh continental parsley
Instructions:
  • In an oven bag, place pine nuts and seal the bag tightly. Microwave on High for 4-5 minutes, shaking the bag gently every minute, until the nuts turn golden brown.
  • Rinse the beans thoroughly and transfer them to a freezer or storage bag with a little water still clinging to them. Arrange the beans in the bag so they are 2-3 deep when the bag is laid flat, then twist the opening closed. Microwave on high for 3-3 1/2 minutes or until the beans turn bright green.
  • In a small jug, combine the lemon juice, oil, chives, parsley, salt, and pepper, whisking until well mixed.
  • Gently open bag of beans, releasing steam. Drain and transfer to a serving bowl. Sprinkle pine nuts, drizzle with dressing, and delicately toss to mix.
