Mediterranean-inspired fish dish bursting with fresh herbs and zesty lemon.
Ingredients:
  • 400g can mixed beans, rinsed, drained
  • 400g can cannellini beans, rinsed, drained
  • 3 celery stalks, halved lengthways, thinly sliced
  • 125.00 ml chopped flat-leaf parsley leaves
  • 1/2 red onion, finely chopped
  • 20.00 ml red wine vinegar
  • 27.30 gm olive oil
  • 8 (about 80g each) whiting fillets, skinned
  • 1 tsp dried chilli flakes
  • Lemon wedges, to serve
Instructions:
  • In a big bowl, mix together the mixed and cannellini beans, celery, parsley, onion, vinegar, and 1 tablespoon of oil. Season with salt and pepper to taste, and let the flavors meld together.
  • Season the whiting fillets with spicy chili flakes and sea salt. Heat the rest of the olive oil in a large non-stick frypan over medium-high heat and pan-sear the whiting in two batches for approximately 1 1/2 minutes on each side until fully cooked.
  • Place the fish on 4 plates, along with the bean salad and lemon wedges for a delightful presentation.
