Whisk up a taste of paradise with fresh fish and exotic herbs and spices.
Ingredients:
  • 16.00 gm brown sugar
  • 2 1/2 tsp dried oregano
  • 2 1/2 tsp garlic powder
  • 1 tsp dried chilli flakes
  • 1 tsp ground black pepper
  • 1 tsp ground allspice
  • 0.63 gm ground cinnamon
  • 0.63 gm ground nutmeg
  • 6 (about 200g each) salmon fillets, skin on
  • 80ml (1/3 cup) olive oil
  • Lime wedges, to serve
Instructions:
  • Mix together the sugar, oregano, garlic, chili, pepper, allspice, cinnamon, and nutmeg in a small bowl.
  • Dry the salmon with paper towel to eliminate excess moisture. Massage the spice mixture onto the salmon until fully coated. Transfer the salmon to a glass or ceramic dish, cover, and refrigerate for 3 hours or overnight to let the flavors infuse.
  • Preheat a barbecue flat plate to medium heat. Brush the salmon lightly with oil and season with salt. Place the salmon skin-side down on the barbecue and cook for 3 minutes on each side, or until it reaches your desired level of doneness. Serve with salad, rice and beans, salsa, and lime wedges.
