Fennel seed and lemon pepper rub

Elevate your seafood with this versatile rub for salmon, tuna, or swordfish.
Ingredients:
  • 40.00 ml fennel seeds
  • 2 tsp black peppercorns
  • 1 lemon, rind finely grated
  • 1 tsp sumac
  • 2.40 gm sea salt flakes
Instructions:
  • Toast the fennel seeds in a small frying pan over medium heat, stirring, for 1-2 minutes until fragrant. Allow to cool for 5 minutes before using.
  • Crush the fennel seeds in a mortar with a pestle until slightly coarse. Alternatively, grind them in a coffee or spice grinder and then transfer to a bowl.
  • Crush the peppercorns in a mortar with a pestle until finely ground, then combine with the fennel seed in a bowl.
  • Combine the lemon rind, sumac, and salt in the bowl and mix well. Store in an airtight container.
