Fresh basil hummus blended with garbanzo beans, olive oil, pine nuts, garlic, and lemon for a vibrant and herby twist on traditional hummus.
Ingredients:
  • Several dashes Tabasco
  • 1/4 cup pine nuts
  • 2 cups sweet basil leaves, packed
  • 3 cloves garlic, smashed then minced
  • 2 15-ounce cans garbanzo beans (chickpeas), rinsed and drained (see Recipe Note)
  • 1/4 cup extra virgin olive oil
  • Up to 1/4 cup water
  • 1/3 cup fresh lemon juice
  • 1 to 1 1/2 teaspoons salt
  • 1 teaspoon tomato paste
Instructions:
  • Toast the pine nuts in a small skillet over medium-high heat. Stir occasionally until they turn golden brown. Transfer most of the toasted pine nuts to a bowl to cool, reserving a small amount for garnish.
  • Prepare the hummus in a food processor: Combine basil leaves and garlic in the food processor bowl and pulse until finely chopped. Add garbanzo beans, pine nuts, lemon juice, olive oil, salt, tomato paste, and a few dashes of Tabasco. Pulse until smooth, adjusting taste with more Tabasco, salt, or lemon juice if needed. Adjust consistency by adding water to desired thickness.
  • To serve, generously drizzle with olive oil, sprinkle with toasted pine nuts, and accompany with pita wedges, crackers, or rustic bread.
