Elevate classic hummus with tangy sun-dried tomatoes and fragrant basil.
Ingredients:
  • 4 cloves garlic
  • 3 tablespoons tahini paste
  • 0.25 cup fresh lemon juice
  • 2 (15.5 ounce) cans garbanzo beans, drained
  • 0.5 cup oil-packed sun-dried tomatoes, drained
  • 0.25 cup finely shredded fresh basil
  • 2 tablespoons olive oil
  • 0.125 teaspoon paprika
Instructions:
  • Combine garlic, salt, tahini, and lemon juice in a food processor; blend until smooth. Add garbanzo beans and 1/2 cup olive oil; blend until smooth, scraping the sides occasionally. Incorporate sun-dried tomatoes by pulsing until finely chopped and mixed in. Lastly, add basil and pulse until incorporated.
  • Transfer the hummus into a shallow serving dish, using a spatula to create decorative grooves on top. Chill in the refrigerator for at least 1 hour. Just before serving, top with 2 tablespoons of olive oil and a sprinkle of paprika. Enjoy!
