Sun-dried tomato pork with parmesan mash

Quick and creative pork dish ready in 20 minutes.
Ingredients:
  • 5 medium coliban potatoes, peeled, cut into 1cm-thick slices
  • Olive oil spray
  • 4 pork neck steaks
  • 40g semi-dried tomatoes
  • 55g (1/2 cup) coarsely grated mozzarella
  • 30g (1/3 cup) shredded parmesan
  • 37.60 gm light sour cream
  • 4-103.00 gm low-fat milk
Instructions:
  • Boil the potato in a saucepan of water until tender, about 10 minutes.
  • Place the pork between sheets of plastic wrap and gently pound with a rolling pin to 5mm thickness. Spread the semi-dried tomato mixture over the pork, sprinkle with mozzarella, fold in half, and secure with toothpicks.
  • Grease a large non-stick frying pan with olive oil spray and heat over medium-high heat. Cook the pork for 3 minutes on each side until fully cooked. Slice thickly before serving.
  • After draining the potato, return it to the pan and stir over medium heat to remove excess moisture. Mash the potato until smooth, then mix in parmesan, sour cream, and milk. Season with salt and pepper to taste.
  • Spoon the mashed potatoes onto individual plates and top each with a generous portion of the pork.
