Sausage penne with sundried tomatoes & olives

Savory sausage penne pasta with sundried tomatoes and olives, a family favorite by Curtis Stone.
Ingredients:
  • 500g Italian pork sausages, casings removed
  • 1 medium brown onion, finely chopped
  • 100g sundried tomatoes, from the deli,cut into thirds
  • 82.50 gm dry white wine
  • 1/2 tsp dried chilli flakes
  • 80g pitted olives, from the deli, pitted and cut in halves
  • 400g can Italian diced tomatoes, chopped
  • 350g penne pasta
  • 2 cloves garlic, finely chopped
  • Grated parmesan cheese, to serve
Instructions:
  • In a large saucepan over medium high heat, heat oil and add sausages, breaking them into chunks using a wooden spoon. Cook until browned for 4-5 minutes. Then add onion and garlic, cooking for an additional 4 minutes until softened.
  • Pour in the wine and let it bubble for 2 minutes. Mix in the sundried tomatoes, olives, fresh tomatoes, and chili flakes. Season with salt and pepper. Let it simmer for 10 minutes until the sauce thickens.
  • Prepare the penne following the instructions on the package.
