Tomato & hummus crostini

Ingredients:
  • 30cm baguette (French breadstick)
  • 1 garlic clove, peeled, halved
  • 2 ripe tomatoes, finely chopped
  • 40.00 ml shredded fresh basil
  • 90g (1/3 cup) hummus
Instructions:
  • Preheat the grill to medium-high. Slice a 30cm baguette (French breadstick) diagonally into 2cm-thick slices. Arrange the bread slices in a single layer on a baking tray and toast under the grill for 1-2 minutes on each side until golden. Rub each piece of toast on one side with a halved garlic clove. In a small bowl, mix 2 ripe tomatoes (finely chopped) with 2 tablespoons of shredded fresh basil. Evenly spread 90g (1/3 cup) hummus on the toasts, then top with the tomato mixture. Serve immediately.
