Savory roasted tomato hummus toast - perfect for breakfast or lunch!
Ingredients:
  • 1 large tomato, cut into 8 slices
  • 1 (15 ounce) can garbanzo beans (chickpeas), drained
  • 2 cloves garlic
  • 1/3 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 8 slices sourdough bread
  • 2 teaspoons za'atar, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then brush the baking sheet with a generous tablespoon of olive oil. Next, elegantly arrange the tomato slices on the sheet and delicately season them with a sprinkle of salt and pepper.
  • Roast in the preheated oven until the tomatoes are soft, about 10 minutes.
  • In a blender or food processor, blend garbanzo beans, garlic, parsley, olive oil, lemon juice, and salt until smooth and creamy.
  • Toast the bread to your liking, then generously spread it with creamy hummus, layer on flavorful roasted tomato slices, and finish with a sprinkle of aromatic za'atar.
