Elevate your roasted veggie pizza with a delicious hummus base.
Ingredients:
  • 375.00 ml plain flour
  • 8.00 gm baking powder
  • 2.40 gm salt
  • 187.50 ml chilled beer
  • 1 red capsicum, roughly chopped
  • 1 eggplant, roughly chopped
  • 2 zucchini, sliced
  • olive oil cooking spray
  • 82.50 ml hommus dip
  • 2 tomatoes, sliced
  • 100g baby bocconcini cheese, sliced
Instructions:
  • Preheat your oven to 200°C. Combine flour, baking powder, and salt in a bowl. Pour in the beer and mix well. Transfer the dough onto a floured surface and knead until smooth for about 3 minutes. Roll out the dough into a 30cm circle and press it into a pizza pan. Cover and let it rest for 15 minutes.
  • Toss vegetables in a roasting pan. Lightly coat with oil spray and season generously with salt and pepper. Roast until tender, about 15 minutes.
  • Spread the luscious hommus over the pizza base, layer with juicy tomatoes, colorful vegetables, and creamy bocconcini. Bake for 12 minutes until the base glistens golden. Season to perfection and serve hot.
